Raise your spoon and celebrate National Soup Month

January is National Soup Month and I can't think of a better way to keep warm during this snowy January (at least on the east coast) than a nice bowl of hot soup! Soup can be so much more than just chicken and noodles in a can, so why not take this month to get fancy with a few soup recipes and reintroduce this staple into your everyday meals? I recently did just that and made a few very tasty soups: Buffalo Chicken Soup

If you've read my past posts, you know that I consider buffalo chicken to be a major food group. So, I decided to take a stab at making buffalo chicken soup. I used this recipe from as a guide, but I did switch a few things up. For one, I made the soup in a slow cooker and cooked it for 4-5 hours. This is how I did it:

  • 4 stalks of celery, diced
  • 1 small onion, diced
  • 1/2 cup flour
  • 1/2 cup fat-free half and half
  • 3 cups of water
  • 1 cube chicken bouillon (boiled the water above and added this to dissolve before putting in the slow cooker)
  • Diced chicken breast
  • 1/2 cup hot sauce
  • Salt, pepper and blue cheese crumbles to garnish

I cut up the chicken (raw), placed in the slow cooker and piled the rest of the ingredients on top. I cooked on high for 3 hours and low for the last two hours, stirring occasionally. I recommend serving with a warm piece of sourdough bread or adding some cooked pasta to the soup.

Potato Bacon Soup

This is a classic and delicious soup and again, easy to make. I followed this recipe from Just A Pinch Recipes but simply threw everything in the slow cooker and let it cook all day. This is what I put in there:

  • 6-7 large potatoes, peeled and cut into bite size pieces
  • 1 medium onion, chopped
  • 2 cups chicken stock
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 6 slices of cooked, chopped turkey bacon
  • 4 oz cream cheese, softened and cubed
  • 1 tsp garlic powder
  • 1 cup fat-free half and half
  • Salt and pepper, to taste
  • Cheddar cheese, shredded and green onions to garnish

I cooked everything for about 5 hours and served hot. Perfect for a cold winter night!
