Check out Jerry's recipe for Cuban Chili. Jerry's recipe won "best presentation" at our House Party chili cookoff! This could be due to him playing cuban music from his computer under the crock-pot and his garnishes of avocado and lime. Serves 10
1 15.5 oz can black beans 1 6 oz can tomato paste 4 bay leaves 6 cloves of garlic, minced 1 tsp ground achiote (optional) 1-2 tsp cayenne pepper 1 lb chorizo, cut into disks 1 lb ground beef (or turkey), browned and drained 2 15.5 oz cans of diced tomatoes 2 bell peppers (any color), chopped 2 onions, chopped 2 cups celery, chopped 2 cups carrots, chopped 1/4 cup white wine vinegar 8 oz. beer 6 cups of water 1 avocado, diced 1 lime
In a large stock pot, add the water and bring to a boil. Add the celery, carrots, onions, tomatoes, corn, peppers, white wine vinegar, beer, black beans, kidney beans, tomato paste, achiote, garlic, bay leaves, and cayenne pepper.
Cover and simmer for 1 hour over medium-low heat. Add the meat and chorizo and simmer covered for another 30 minutes. Serve topped with diced avocado and fresh lime juice...and some assorted Tex-Mex tunes. And a hat - a good hat always tops-off the ambiance and presentation!
