How does a working mom of 2 active girls get a home cooked meal on the table by 6:30 every night? It's simple - a crockpot. Before I divulge any recipes I want to talk about selecting the right crockpot. It's like finding an amazing pair of jeans, you have to try different brands and styles before finding your perfect fit. My perfect fit is Crock-PotR Programmable 6-Quart Slow Cooker. I love the timer and its warming feature. It's astonishing, now that I started cooking using my crockpot, I can't remember how I got by without it. After dinner every night, before we clean up the kitchen, my girls and I prep our dinner for the next day. As we chop, mince, measure and dice we talk about our day. We go around and share at least three good things that happened that day and one bad thing. Tonight we prepped one of the favorites in our house - turkey meatloaf - and I learned that my daughter tried out for the school play. Here's what we used:
1 1/2 lbs of ground turkey meat
1 1/2 cups of breadcrumbs (Italian)
1 cup of ketchup
1/2 cup of onions (I like to sautee them first)
2 egg whites
3 ounces of tomato paste - place to the side
Mix all of the ingredients except the tomato paste and shape into a loaf. Add the tomato paste to the top. Cook on low for 8 hours.
I can't wait to come home tomorrow night. I know I'll be greeted by the pitter patter of footsteps running down the stairs with excitement of the day on my daughter's minds and the tantalizing aroma of what's going to be the start of the best part of my day - sitting down with my family to eat the our creation from the night before.
